dc.description.abstractVolatile compounds were isolated from flesh and skin of kweni fruit by dynamic headspace sampling. Aromagram of flesh and skin extracts were similar with respect to predominant odorants. Ethyl butanoate with sweet, fruity, and mango skin-like odor, was the most intense odorant in both extracts. Other potent odorants included ethyl crotonate, alpha-pinene, and beta-myrcene. An unidentified compound described as sweet, fruity, ripe mango-like, was also considered as potent odorant in both extracts. The other unidentified potent odorant compound having sweet, fruity and mango leaves-like odor, was detected only in volatile skin extract.en
