      Abstract
      Bercak hitam ("blackspot") pada udang merupakan salah salu penurunan mutu paling awal yang berdampak pada penurunan nilai ekonomis produk. yang disebabkan oleh aktivitas enzin? fenolesa. Sulfit yang sudah umurn digunakan dan sangat efektif untuk rnencegah perkembangan bercak hilam tersebut ternyata dapal menyebabkan asthma.
