The increasing amount of waste generated from the processing of black grass jelly that has not been properly utilized encourages the need for efforts to develop alternative feed ingredients for ruminant livestock. This study aims to examine the use of black grass jelly waste as a feed ingredient for ruminant livestock by considering its nutritional value and bioactive content. The methods used include proximate analysis, pH measurement, phytochemical screening, determination of total flavonoid levels, and testing antioxidant activity using the DPPH method. The pH value of the sample was in the range of 5.7–6.0, the total flavonoid content reached approximately 99.7020 mg QE/L extract, phytochemical screening showed the dominance of terpenoid compounds, and antioxidant activity was relatively weak with an IC50 value of approximately 74848.18 ppm. The results indicate that black grass jelly waste requires additional processing to improve its quality and storage capacity. Therefore, with the right processing and formulation, black grass jelly waste can be used as ruminant livestock feed.
