      Abstract
      Tempe merupakan salah satu sumber protein nabati yang banyak dikonsumsi masyarakat Indonesia. Kacang gude berpotensi dimanfaatkan sebagai bahan substitusi kedelai pada pembuatan tempe karena mengandung protein, zat besi, dan komponen gizi lain yang baik. Penelitian ini bertujuan mengevaluasi karakteristik tempe kombinasi kacang gude dan kedelai (50:50) dengan fermentasi spontan BAL selama 18 jam dan fermentasi inokulum Rhizopus spp. 42 jam (P1) atau 46 jam (P2), serta menentukan perlakuan terbaik. Penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan tiga ulangan. Parameter yang dianalisis meliputi sifat fisik, sensori, kandungan zat gizi, kadar dan bioaksesibilitas zat besi in vitro, informasi nilai gizi, klaim gizi, kontribusi zat gizi, dan estimasi biaya bahan baku. Hasil penelitian menghasilkan tempe bertekstur padat, kompak, lebih lunak, serta memperbaiki atribut rasa asam dan aftertaste. Kandungan zat besi berkisar 2,29–4,48 mg/100 g dengan bioaksesibilitas in vitro 4,94–5,37% yang cenderung meningkat seiring bertambahnya waktu fermentasi. Tempe kombinasi memenuhi persyaratan sebagai sumber protein (25,6% ALG) dan sumber zat besi (20,4% ALG), serta berkontribusi 11–14% AKG protein dan 12–25% AKG zat besi per sajian (50 g) pada kelompok remaja dan dewasa.       Tempe is one of the most widely consumed plant-based protein foods in Indonesia. Pigeon pea has the potential to partially substitute soybean in tempe production due to its high protein, iron, and nutritional value. This study evaluated the characteristics of tempe made from a 50:50 combination of pigeon pea and soybean using an 18 h spontaneous fermentation of BAL and fermentation of Rhizopus spp. inoculum 42 h (T1) or 46 h (T2). A Completely Randomized Design with three replications was applied. Physical properties, sensory characteristics, nutrient composition, iron content, in vitro iron bioaccessibility, nutrition facts, nutrition claims, nutrient contribution, and raw material cost were analyzed. The modified process produced tempe with a compact structure, softer texture, and improved sourness and aftertaste. Iron content ranged from 2.29–4.48 mg/100 g, with in vitro bioaccessibility of 4.94–5.37%. The tempe qualified as a source of protein (25.6% RDA) and iron (20.4% RDA).
