ADELIA MARGARETA.

ADELIA MARGARETA. Consumption Patterns of Soybean and Their Derivatives in Indonesia. Supervised by SUHARNO and ANISA DWI UTAMI
Household consumption is a major component of Indonesia’s Gross Domestik Product (GDP), contributing an average of 53 percent to GDP during the 2017-2024 period. Among various food commodities, soybeans play a crucial role in meeting the nutritional needs of the population, particularly for low-income groups, due to their high protein content and relatively affordable price in processed products such as tofu and tempeh. However, high dependence on imported soybeans makes domestik soybean prices vulnerable to fluctuations, as reflected in the price spike in early 2021, which led to a decline in household purchasing power, particularly among groups that rely on tofu and tempeh as their primary source of protein. Previous research on food consumption patterns and demand has been limited to single-equation model estimates; consequently, no empirical analysis exists that simultaneously integrates the demand elasticities of soybeans and their byproducts within a single systemic framework. Based on these issues, this study aims to: (1) analyze consumption patterns of soybeans and their derivatives in Indonesia, and (2) analyze the elasticity levels of soybeans and their derivatives in Indonesia.
To address the research objectives, the data used were secondary data sourced from the 2017 National Socioeconomic Survey (SUSENAS) in the form of cross-sectional data, supplemented by supporting data from the Central Statistics Agency, the Ministry of Agriculture, as well as previous journals and articles. The analysis method employed was a combination of descriptive analysis to describe the patterns of expenditure share, prices, and consumption of the three commodities, as well as quantitative analysis using the Linear Approximation Almost Ideal Demand System (LA-AIDS) model to simultaneously estimate own-price elasticity, cross-price elasticity, and expenditure elasticity. Data processing was performed using Stata 15 and Microsoft Excel 2010.
The descriptive analysis results show that the pulses and legumes group accounts for only 5,06 percent of total household food expenditure, with tempeh occupying the highest expenditure share (1,96%), followed by tofu (1,31%) and soybeans (1,14%), underscoring tempeh's role as the primary plant-based protein source for Indonesian households. In terms of nutritional intake, average daily household calorie and protein consumption were recorded at 2.221.61 kcal/capita/day and 64,72 grams/capita/day, respectively, with the pulses and legumes group contributing 69,12 kcal/capita/day (3,11%) and 15,05 grams of protein/capita/day (23,26%). The combined protein contribution of tofu and tempeh at 8,72 grams/capita/day (13,48% of total daily protein intake) exceeds the individual protein contributions of meat (6,14 grams/capita/day; 9,48%) and fish/shrimp/squid/shellfish (6,83 grams/capita/day; 10,55%), highlighting their strategic role as relatively affordable substitutes for animal protein. The estimation results of the LA-AIDS model indicate that the demand for all three commodities is own-price inelastis, with own-price elasticity values of -0,233 for soybeans, -0,453 for tofu, and -0,455 for tempeh. Cross-price elasticity estimates reveal a positive substitution relationship across all commodity pairs, with the strongest link identified between tofu and tempeh, indicating that households possess the flexibility to switch between processed soybean forms in response to price shifts. Meanwhile, income elasticity exhibits varying patterns across commodities: soybean demand is income-inelastis at 0,398, whereas tofu (1,383) and tempeh (1,267) are income-elastic and classified as superior goods, with tofu demonstrating the highest responsiveness to increases in household income. These findings suggest that price intervention policies alone will not suffice to boost the consumption of soybeans and their derivatives; hence, strengthening domestic production and price stabilization at the upstream level are required, along with incentives for tofu and tempeh producers to diversify into value-added products to capture consumption transition opportunities as household incomes rise.
