dc.description.abstractKulit buah naga merah mengandung betasianin yang berpotensi digunakan sebagai pewarna alami pada sediaan kapsul, namun kestabilannya dipengaruhi oleh suhu dan kondisi penyimpanan. Penelitian ini bertujuan mengarakterisasi betasianin kulit buah naga merah serta mengevaluasi kestabilannya terhadap pemanasan dan aplikasinya sebagai pewarna kapsul gelatin. Ekstrak yang didapat menggunakan metode Ultrasonic Assisted Extraction (UAE) dengan pelarut akuades terasamkan, kemudian dikarakterisasi menggunakan spektrofotometri UV-Vis. Pengujian kestabilan dilakukan pada suhu 40 °C, 50 °C, dan 60 °C selama 0–60 menit, sedangkan evaluasi kapsul meliputi kestabilan pH dan kadar air. Hasil penelitian menunjukkan panjang gelombang maksimum betasianin sebesar 532 nm dengan kadar 34,92 mg/L. Variasi pada suhu 40°C memberikan kestabilan terbaik dengan absorbansi 0,1948, retensi warna 109,53%, dan ?pH -0,02. Formulasi gelatin G2 menunjukkan performa terbaik dengan ?pH +0,01 dan kadar air 14,08%. Potensi betasianin sebagai pewarna alami kapsul dinilai baik dan mampu menghasilkan warna merah yang menarik.
dc.description.abstractRed dragon fruit peel contains betacyanin that has potential as a natural colorant for capsule formulations, although its stability is affected by temperature and storage conditions. This study aimed to characterize betacyanin extracted from red dragon fruit peel and evaluate its thermal stability and application as a gelatin capsule colorant. The extract obtained using the Ultrasonic Assisted Extraction (UAE) method with acidified distilled water as the solvent was then characterized using UV-Vis spectrophotometry. The stability testing of the extract was carried out at temperatures of 40 °C, 50 °C, and 60 °C for 0–60 minutes, while the capsule evaluation included pH stability and moisture content. Results showed a maximum absorption wavelength of 532 nm and a betacyanin content of 34.92 mg/L. A temperature variation of 40°C gives the best stability, shown by absorbance of 0.1948, color retention of 109.53%, and ?pH of -0.02. Gelatin G2 exhibited the best performance with ?pH of +0.01 and moisture content of 14.08%. Betacyanin demonstrated good potential as a natural capsule colorant and produced an attractive red color.
