dc.description.abstractLimbah susu memiliki kandungan protein tinggi, terutama kasein, sehingga berpotensi dimanfaatkan sebagai bahan baku produk bernilai tambah. Penelitian ini bertujuan menghasilkan filamen kasein dari limbah susu melalui metode presipitasi asam dan wet spinning serta membandingkan rendemen kasein dan karakteristik filamen yang dihasilkan dari limbah susu UHT full cream, low fat, dan nonfat. Kasein diekstraksi menggunakan asam asetat hingga pH 4,6, kemudian dilarutkan dalam NaOH menjadi sodium caseinate, ditambahkan gliserol 15%, dan diproses dengan metode wet spinning. Hasil penelitian menunjukkan rendemen kasein tertinggi diperoleh pada susu full cream (6,54%), diikuti low fat (4,72%) dan nonfat (3,68%). Ketiga perlakuan membentuk filamen, tetapi hanya susu nonfat yang menghasilkan filamen lebih kontinu, lebih stabil, dan dapat dipertahankan setelah pengeringan. Limbah susu nonfat memiliki potensi paling baik sebagai bahan baku pembentukan filamen kasein melalui metode wet spinning.
dc.description.abstractMilk waste contains a high amount of protein, particularly casein, making it a potential raw material for value-added products. This study aimed to produce casein filaments from milk waste using acid precipitation and the wet spinning method and to compare the casein yield and filament characteristics obtained from UHT full cream, low-fat, and nonfat milk waste. Casein was precipitated with acetic acid at pH 4.6, dissolved in sodium hydroxide to produce sodium caseinate, mixed with 15% glycerol, and processed by wet spinning. The highest casein yield was obtained from full cream milk (6.54%), followed by low-fat (4.72%) and nonfat milk (3.68%). Filaments were formed in all treatments; however, only the nonfat treatment produced filaments with better continuity and stability that remained after drying. These results indicate that nonfat milk waste has the greatest potential as a raw material for casein filament production using the wet spinning method.
