| dc.description.abstract | Dimsum Kalkulus adalah usaha makanan ringan di kantin IPB University dengan produk utama dimsum, siomay, dan mentai. Permasalahan yang dihadapi Dimsum Kalkulus adalah terbatasnya kapasitas penyimpanan (freezer) sebesar 26 pak ekuivalen dan kebijakan pemesanan yang berbasis perkiraan, sehingga menyebabkan ketidakseimbangan stok yang meningkatkan biaya operasional. Penelitian ini bertujuan untuk menerapkan model Economic Order Quantity (EOQ) probabilistik multi-item dengan kendala kapasitas penyimpanan dan menentukan kuantitas pemesanan optimal, stok pengaman, dan titik pemesanan kembali yang meminimumkan total biaya persediaan Dimsum Kalkulus. Hasil menunjukkan kuantitas pemesanan optimal sebanyak 9,18 pak dimsum, 4,13 pak siomay, 1,44 pak mentai dengan total biaya persediaan Rp3.087.332 per tahun. Uji skenario kenaikan permintaan sebesar 50% dan penambahan satu unit freezer menurunkan biaya menjadi Rp2.611.568 per tahun dengan payback period selama 1,06 tahun. | |
| dc.description.abstract | Dimsum Kalkulus is a snack business located in the IPB University canteen, with dimsum, siomay, and mentai as its main products. The problems faced by Dimsum Kalkulus include limited freezer storage capacity of 26 equivalent packs and an experience-based ordering policy, which lead to stock imbalances and increase operational costs. This study aims to apply a multi-item probabilistic Economic Order Quantity (EOQ) model with storage capacity constraints and to determine the optimal order quantity, safety stock, and reorder point that minimize Dimsum Kalkulus total inventory cost. The results show that the optimal order quantities are 9.18 packs of dimsum, 4.13 packs of siomay, and 1.44 packs of mentai, with a total inventory cost of IDR 3,087,332 per year. A scenario test involving a 50% increase in demand and the addition of one freezer reduces the cost to IDR 2,611,568 per year, with a payback period of 1.06 years. | |
