      Pengembangan Phantom Agar sebagai Model Marbling pada Daging dengan Variasi Konsentrasi Gula Bertingkat

      Abstract
      Marbling merupakan parameter penentu kualitas daging yang dinilai secara visual, kualitatif, dan cenderung subjektif. Pencitraan ultrasonografi, radiografi, dan tomografi impedansi listrik (TIL) merupakan teknologi yang berpotensi untuk memprediksi parameter tersebut. Penelitian ini bertujuan untuk mengembangkan serta mengevaluasi phantom agar sebagai media simulasi dan mencitrakan marbling pada potongan daging komersial melalui ultrasonografi, radiografi, dan TIL. Terdapat empat variasi phantom agar, yaitu kontrol (K) dan perlakuan (P) yang disimpan pada suhu ruang (Rg) serta refrigerator (Rf). Phantom agar perlakuan berisi bagian agar yang mengandung gula jenuh, gula tidak jenuh, dan akuades sebagai model simulasi lemak. Durabilitas, ekogenisitas, opasitas, serta resistivitas phantom agar diukur selama 30 hari dan 1 hari untuk daging mata rusuk dan has luar sapi, serta mata rusuk kerbau. Ekogenisitas dan opasitas dianalisis menggunakan software ImageJ, sedangkan resistivitas diiterasi menggunakan software Res2dinv. Hasil menunjukkan phantom KRf memiliki daya tahan tertinggi dengan nilai sineresis terendah dibanding phantom PRg. Phantom Rg memiliki ekogenisitas yang lebih tinggi daripada Rf, namun pada opasitas terjadi sebaliknya. Nilai ekogenisitas dan opasitas tertinggi terdapat pada phantom dengan konsentrasi gula jenuh. Citra ultrasonografi menunjukkan ekogenisitas keseluruhan phantom agar adalah hipoekoik, sedangkan pada daging, mata rusuk sapi (MRS) memiliki ekogenisitas paling tinggi dibanding has luar sapi (HSL) dan mata rusuk kerbau (MRK). Citra radiografi menunjukkan nilai opasitas pada keempat phantom agar dan ketiga daging adalah abu-abu. Citra TIL menunjukkan resistivitas homogen pada seluruh phantom agar, sedangkan pada daging, MRK memiliki resistivitas paling tinggi dibanding MRS dan HLS. Hasil analisis regresi menunjukkan bahwa terdapat hubungan yang baik pada penilaian ekogenisitas dan resistivitas daging vs phantom agar, kecuali pada MRK vs phantom agar di kedua suhu, sedangkan nilai opasitas daging vs phantom agar rata-rata tidak memiliki hubungan yang baik. Teknik ultrasonografi, radiografi, dan TIL efektif untuk menilai simulasi marbling pada phantom agar dan memprediksi secara kuantitatif pada marbling daging.
       
      Marbling is a key parameter for assessing meat quality that is evaluated visually, qualitatively, and tends to be subjective. Ultrasonography, radiography, and electrical impedance tomography (EIT) are technologies with the potential to predict this parameter. The purpose of this study is to develop and evaluate a phantom to serve as a simulation tool and to visualize marbling in commercial meat cuts using ultrasound, radiography, and EIT. There were four variations of agar phantoms: control (K) and treatment (P) groups at room temperature (Rg) and in the refrigerator (Rf), where the treatment groups consisted of agar with saturated sugar, unsaturated sugar, and distilled water as a model for simulating fat. The durability, echogenicity, opacity, and resistivity of the phantom agar were measured over a 30-day period and on a single day for beef rib eye, beef sirloin, and buffalo rib eye. Echogenicity and opacity were analyzed using ImageJ software, while resistivity was analyzed using Res2dinv software. The results show that the Rfphantom had the highest durability and the lowest syneresis value compared to the Rg phantom. The Rg phantom had higher echogenicity than the Rf phantom. Conversely, the Rg phantom had lower opacity than the Rf phantom. The saturated sugar concentration in the P phantom had the highest echogenicity and opacity. Among meats, beef rib eye had the highest echogenicity, followed by beef sirloin and buffalo rib eye. Radiographic images revealed gray-scale opacity for all phantoms and meat samples. EIT images indicated homogeneous resistivity across all phantoms. For meat samples, buffalo rib eye showed the highest resistivity, surpassing both beef rib eye and beef sirloin. Regression analysis results indicated a strong correlation between echogenicity and resistivity scores for meat vs agar phantoms, except for buffalo rib eye at vs agar phantom in both temperatures, while the average opacity scores for meat vs agar phantoms did not show a strong correlation. Ultrasonography, radiography, and TIL are effective techniques for evaluating simulated marbling in agar phantoms and quantitatively predicting marbling in meat.
