Program Makan Bergizi Gratis (MBG) menggunakan daging ayam sebagai
salah satu sumber protein hewani yang rentan terkontaminasi Salmonella
Typhimurium dan berpotensi menyebabkan penyakit bawaan pangan. Penelitian ini
bertujuan menguji efektivitas klorin dalam menginaktivasi Salmonella
Typhimurium yang diisolasi dari daging ayam pada Satuan Pelayanan Pemenuhan
Gizi (SPPG) di Bogor. Suspensi bakteri disetarakan dengan standar 0,5 McFarland,
kemudian diberi perlakuan klorin dengan konsentrasi 20 ppm, 30 ppm, 40 ppm, 50
ppm, 70 ppm, dan 100 ppm serta waktu kontak 5 menit, 10 menit, dan 15 menit.
Pengujian dilakukan menggunakan media Xylose Lysine Deoxycholate (XLD) dan
dianalisis dengan uji Chi-Square. Hasil penelitian menunjukkan bahwa pada
konsentrasi 20 ppm masih ditemukan pertumbuhan Salmonella Typhimurium pada
seluruh waktu kontak, sedangkan pada konsentrasi =30 ppm tidak ditemukan
pertumbuhan koloni. Penelitian ini menyimpulkan bahwa klorin efektif
menginaktivasi Salmonella Typhimurium pada konsentrasi minimal 30 ppm The Free Nutritious Meal Program (MBG) uses chicken meat as a source of
animal protein that is susceptible to contamination by Salmonella Typhimurium,
which may cause foodborne diseases. This study aimed to evaluate the effectiveness
of chlorine in inactivating Salmonella Typhimurium isolated from chicken meat at
the Nutrition Fulfillment Service Unit (SPPG) in Bogor. Bacterial suspensions were
adjusted to the 0.5 McFarland standard and treated with chlorine at concentrations
of 20 ppm, 30 ppm, 40 ppm, 50 ppm, 70 ppm, and 100 ppm with contact times of
5 minutes, 10 minutes, and 15 minutes. The examination was conducted using
Xylose Lysine Deoxycholate (XLD) agar and analyzed using Chi-Square. The
results showed that at 20 ppm, Salmonella Typhimurium. was still detected at all
contact times, whereas no bacterial growth was observed at concentrations =30 ppm.
This study concluded that chlorine was effective in inactivating Salmonella
Typhimurium at a minimum concentration of 30 ppm
