      Abstract

Sugar is an important organic compound widely consumed by the population, monitoring its concentration is crucial in the food industry and healthcare. This study aimed to design and fabricate an evanescent wave based optical sensor for sugar concentration measurement and to analyze the effect of cladding stripping length variation on sensor performance. The sensor was fabricated from multimode optical fiber with five cladding stripping length variations of 1,5 cm, 2 cm, 2,5 cm, 3 cm, and 3,5 cm, tested using sugar solutions at concentrations of 0-30% w/v. Sugar concentration showed a linear relationship with refractive index (R^2=0,99883) and all sensors showed a linear decrease in output light intensity with increasing concentration with (R^2=0,9698-0,9859). The 3 cm stripping length was the optimal configuration with sensitivity of 2,5527 nW(% w/v), resolution of 0,3439% w/v, limit of detection of 1,0317% w/v, and response time of 10,774 s. This sensor has potential as a simple, portable, and non-destructive alternative for sugar concentration measurement.
