Perbandingan Dampak Lingkungan Dua Varian Produk Sereal Menggunakan Metode Life Cycle Assessment
Abstract
Penelitian ini membandingkan dampak lingkungan dua varian produk sereal, yaitu sereal varian rasa cokelat dan rasa buah pada industri pangan menggunakan metode Life Cycle Assessment (LCA) dengan batasan sistem gate to gate dan unit fungsional satu kemasan box sereal siap konsumsi dengan berat bersih 150 gram. Penilaian dampak lingkungan pada proses mixing, extruder, coating, oven, dan packing dilakukan menggunakan metode CML IA Baseline dan Cumulative Energy Demand. Hasil penelitian menunjukkan bahwa produk sereal varian rasa cokelat memiliki dampak lingkungan lebih tinggi pada kategori dampak GWP, AP, EP, dan renewable energy, sedangkan sereal varian rasa buah lebih tinggi pada kategori dampak ODP dan non-renewable energy. Proses packing menjadi hotspot utama pada seluruh kategori dampak akibat penggunaan kemasan aluminium foil multilayer, kardus, dan tingginya konsumsi energi. Rekomendasi perbaikan meliputi penggunaan kemasan ramah lingkungan, peningkatan efisiensi energi, serta pemanfaatan energi terbarukan. This study compares the environmental impact of two cereal product variants, namely chocolate-flavored and fruit-flavored cereals, in the food industry using the life cycle assessment (LCA) method with a gate-to-gate system boundary and a functional unit of one ready-to-eat cereal box weighing 150 grams. The environmental impact assessment for the mixing, extrusion, coating, baking, and packing processes was conducted using the CML IA Baseline and Cumulative Energy Demand methods. The reslts show that the chocolate-flavored cereal product has a higher environmental impact in the categories of GWP, AP, EP, and renewable energy, while the fruit-flavored cereal is higher in the ODP and non-renewable energy categories. The packing process is the main hotspot across all impact categories due to the use of multilayer aluminum foil packaging, cardboard, and high energy consumption. Recommended improvements include using eco-friendly packaging, increasing energy efficiency, and utilizing renewable energy.
