      Pengetahuan, Sikap, dan Praktik Penyembelihan Halal pada Pedagang Ayam Potong di Pasar Tradisional Kota Bogor

      Abstract
      Daging ayam merupakan salah satu pangan asal hewan yang banyak dipilih oleh masyarakat untuk memenuhi kebutuhan protein hewani. Aspek kehalalan dalam proses penyembelihan ayam sering kali menjadi perhatian utama bagi umat Muslim, khususnya di daerah dengan mayoritas penduduk Muslim seperti Kota Bogor. Penelitian ini bertujuan untuk menilai dan mengetahui tingkat pengetahuan, sikap, dan praktik serta hubungan antara praktik dan hasil penyembelihan ayam yang dilakukan oleh pedagang ayam di pasar tradisional Kota Bogor berdasarkan aspek kehalalan. Penelitian dilakukan dengan survei melalui wawancara secara langsung pada pedagang ayam yang melakukan penyembelihan ayam mandiri dengan menggunakan kuesioner terstruktur pada semua anggota populasi. Sampe leher dan kepala ayam diambil secara acak sebanyak sepuluh pada setiap pedagang ayam. Berkaitan dengan penyembelihan halal, sebagian besar pedagang ayam di pasar tradisional Kota Bogor memiliki tingkat pengetahuan yang cukup, sikap yang netral, dan praktik yang berkategori sedang. Pengetahuan, sikap, dan praktik yang masih perlu diperbaiki dari pedagang terutama terkait dengan pembacaan doa, dan penanganan ayam setelah penyembelihan. Pemeriksaan terhadap hasil penyembelihan ayam yang dilakukan oleh pedagang menunjukkan sebagian besar saluran yang harus terpotong (arteri, trakea dan esofagus) ternyata tidak terpotong dengan sempurna. Tingkat praktik penyembelihan ayam oleh pedagang diketahui memiliki korelasi positif terhadap hasil penyembelihannya yang berarti praktik penyembelihan harus terus diperbaiki untuk mendapatkan hasil pemotongan yang lebih baik.
       
      Chicken meat is one of the animal-derived foods that many people choose to fulfill their animal protein needs. The halal aspect of the chicken slaughtering process is often a major concern for Muslims, especially in areas with a majority Muslim population such as Bogor City. This study aims to assess and determine the level of knowledge, attitudes, and practices and the relationship between practices and results of chicken slaughter by chicken traders in traditional markets in Bogor City based on halal aspects. The study was conducted through a survey through direct interviews with chicken traders who conduct independent chicken slaughter using a structured questionnaire for all members of the population. Samples of chicken necks and heads were taken randomly as many as ten in each chicken trader. Regarding halal slaughter, most chicken traders in traditional markets in Bogor City have a moderate level of knowledge, neutral attitudes, and moderate practices. Knowledge, attitudes, and practices that still need improvement from traders are mainly related to the recitation of prayers, and handling of chickens after slaughter. Examination of the results of chicken slaughter carried out by traders showed that most of the channels that should be cut (artery, trachea, and esophagus) were not completely cut. The level of chicken slaughter practices by traders was found to have a positive correlation with the slaughter results, which means that slaughter practices should continue to be improved to get better slaughter results.
