This study is aimed to observe the application of biosecurity and hygiene in
the poultry meat marketplace (PMM) in West Jakarta assessed by using checklist
which was developed from audit checklist of veterinary establishment number
(Nomor Kontrol Veteriner/NKV). The audit has been conducted with observation
method in PMM which are resgitered in the district office for livestock and
fisheries in West Jakarta. The study involved 104 PMMs which consisted of 91
PMMs in traditional markets at 8 subdistricts and 13 supermarkets which were
selected from each subdistrict (excluding Tambora). The elements of biosecurity
and hygiene which were assessed included location, building and facilities,
hygiene of carcass handling, equipments, building and equipments sanitation,
personal hygiene, waste disposal management and environmental sanitation. The
results showed that the biosecurity and hygiene practices of PMMs in supermarket
in West Jakarta were categorized as good (23.1%) and moderate (76.9%).
Meanwhile, the biosecurity and hygiene practices of PMMs in the traditional
market were categorized as moderate (18.7%) and poor (81.3%). This condition
should be highly considered related to food safety and environmental health.
