      Analisis Tingkat Pengeluaran Darah pada Sayap Ayam Layer Berbasis Kolorimetri dengan Metode Pengolahan Citra Digital

      Abstract
      Ayam layer afkir biasanya banyak dijual terutama menjelang hari raya. Banyaknya penjualan ayam layer afkir dilakukan dalam rangka memenuhi tingginya permintaan masyarakat terhadap daging ayam. Konsumsi daging ayam terus meningkat setiap waktunya namun tidak sebanding dengan peningkatan kualitasnya. Tujuan penelitian ini yaitu mengukur konsentrasi darah pada daging sayap ayam layer afkir serta membandingkan kemampuan pemindai dan kamera ponsel dengan spektrofotometer berdasarkan prinsip kolorimetri. Daging sayap ayam sebanyak 40 sampel sayap kiri dan kanan dipotong kecil-kecil untuk dibuat ekstrak. Ekstrak daging yang telah direaksikan dengan malachite green kemudian ditambahkan KMnO4 kemudian diuji menggunakan spektrofotometer dan pemindaian menggunakan pemindai dan kamera ponsel. Hasil pemindaian kemudian diolah dengan menggunakan aplikasi ImageJ. Nilai konsentrasi darah diolah menggunakan SPSS. Hasil menunjukkan bahwa konsentrasi darah yang diukur menggunakan spektrofotometer, pemindai dan kamera ponsel pada daging sayap ayam layer afkir yang disembelih dengan proses penggantungan memiliki perbedaan yang nyata (P<0,05) dengan daging ayam yang disembelih tanpa proses penggantungan. Nilai koefisien korelasi antara spektrofotometer dengan pemindai dan kamera ponsel masing-masing adalah 0,95 dan 0,98. Berdasarkan hasil tersebut, dapat disimpulkan bahwa pemindai dan kamera ponsel memiliki potensi sebagai alat alternatif untuk mengukur konsentrasi darah pada daging ayam layer.
       
      Culled layer chicken is usually sold, especially before the feast days. The number of sales of culled layer chickens is carried out in order to supply the high public demand for chicken meat. Consumption of chicken meat continues to increase every time but is not comparable with the increase in quality. The purpose of this study was to measure blood concentrations in layer chicken wing meat and to compare the capabilities of scanner and mobile camera to spectrophotometer based on colorimetric principles. 40 samples of left and right wings were cut into small pieces for extract. The meat extract that had been reacted with malachite green was then added with KMnO4 and then tested using spectrophotometer and scanning using scanner and mobile camera. The scan results are then processed using the ImageJ application. Blood concentration values were processed using SPSS. The results showed that the blood concentration measured using spectrophotometer, scanner and mobile camera on chicken wing meat slaughtered by the hanging process had a significant difference (P <0.05) with chicken meat slaughtered without hanging. The correlation coefficient values between spectrophotometer with scanner and mobile camera were 0,95 and 0,98 respectively. According to the results, it can be concluded that scanner and mobile camera have the potential as an alternative tools for measuring blood concentrations in layer chicken meat.
