      Abstract
      Bahan pangan lokal Indonesia banyak memiliki potensi yang baik, namun belum dimanfaatkan secara optimal. Salah satu bahan pangan tersebut adalah waluh/labu kuning (Curcubita pepo Linn.). Penelitian ini dilakukan meningkatkan pemanfaatkan puree waluh sebagai salah satu bahan baku pada pembuatan cookies.
