      Abstract
      Umumnya diketahui bahwa enzim akan menunjukkan aktivitas katalisisnya dalam keadaan akueus. Namun adanya air yang digunakan sebagai pelarut ini menghambat aplikasi enzim dalam kegiatan beberapa industri. Hal ini karena air bukan mempakan pelarut yang baik bagi kebanyakan senyawa-senyawa organik.
