      Abstract
      Hidrolisa polisakarida adalah suatu proses penguraian polimer polisakarida menjadi komponen-komponen yang lebih sederhana dalam bentuk monomer-monomernya, penguraian tersebut terjadi karena ikatan-ikatan dalam senyawa polimer tersebut dipecah oleh molekul air dengan bantuan suatu katalis, dan katalis ini adalah asam mineral atau enzim.
