      Abstract
      Produksi asam sitrat di Indonesia dilakukan secara fermentasi medium padat dengan menggunakan Aspergillus niger. Bahan baku yang digunakan sebagai medium fermentasi tersebut adalah ampas tapioka (kadar air 65-75 persen) yang ditambah dengan dedak sebagai sumber nitrogen.
