      Abstract
      Tujuan penelitian ini adalah untuk mempelajari proses pembuatan tempe instan serta pengaruh jenis plastik pengemas dan lama penyimpanan kedelai olah kering terhadap mutu tempe yang dihasilkan. ~lastik pengemas yang digunakan adalah High Density Polyetilen (HDPE) dan Low Density Polyetilen (LDPE) sedangkan lama penyimpanan dilakukan adalah 0, 2, 4 dan 6 minggu.
