      Abstract
      Penggaraman yang diikuti dengan pengeringan merupakan cara pengolahan tradisonal yang paling umum dilakukan. Pada umumnya pengolahan tradisional melakukan penggaraman dengan konsentrasi garam dan waktu penggaraman yang tidak tertentu, sehingga mutu ikan yang dihasilkan tidak seragam.
