      Pengembangan Produk Jeli dalam Kemasan Cup Berbasis Emulsi Minyak Sawit Merah sebagai Sumber Provitamin A

      Abstract
      Kekurangan vitamin A (KVA) masih menjadi permasalahan gizi serius di Indonesia, terutama pada anak-anak. Minyak sawit merah (MSM) merupakan sumber provitamin A yang tinggi, tetapi pemanfaatannya masih terbatas. Penelitian ini bertujuan mengembangkan produk jeli berbasis emulsi MSM yang memiliki kandungan provitamin A dengan karakteristik fisikokimia menyerupai produk komersial dan disukai secara sensori. Produk jeli dikembangkan dengan tiga konsentrasi emulsi MSM (8,37%, 25,12%, dan 41,87%) berdasarkan perbandingan terhadap bobot total produk. Ketiga formula tersebut dianalisis berdasarkan kekuatan gel, kandungan total karotenoid, dan uji hedonik. Jeli dikemas dalam cup plastik berukuran 25 mL dan diproses pasteurisasi dengan pemanasan dalam air pada suhu 80 ± 2 ? selama 1 menit. Hasil pengujian menunjukkan formula dengan penambahan 25,12% emulsi MSM adalah formula terbaik yang memiliki kekuatan gel mendekati produk komersial, kandungan karotenoid sebesar 25,74 mg/kg dengan tingkat retensi terhadap karotenoid dalam MSM sebesar 25,62%, dan skor penerimaan sensori secara keseluruhan sebesar 5,90 ± 0,61 yang dikategorikan “agak suka” mendekati “suka”. Produk jeli emulsi MSM mengandung vitamin A sebesar 86 RE/100 g. Takaran saji 75 g mengandung vitamin A sebesar 64,5 RE, setara dengan 16,30–17,20% dari AKG vitamin A untuk anak-anak, sehingga produk jeli emulsi MSM memenuhi syarat untuk diklaim sebagai pangan sumber vitamin A
       
      Vitamin A deficiency (VAD) has remained a serious nutritional issue in Indonesia, particularly among children. Red palm oil (RPO) has been identified as a rich source of provitamin A, but it’s utilization was limited. This research was conducted to develop jelly product based on RPO emulsion that contained provitamin A, with physicochemical characteristics resembling commercial products with acceptable sensory atributes. Jelly product was formulated using three different concentrations of RPO emulsion (8,37%, 25,12%, and 41,87%) based on the total weight of the product. The three formulations were analyzed for gel strength, total carotenoid content, and hedonic evaluation. The jelly was packaged in 25 mL plastic cups and pasteurized by heating in water at 80?±?2?°C for 1 minute. The results indicated that the formulation containing 25,12% RPO emulsion was selected as the best formulation, having gel strength closest to the commercial product, total carotenoid content of 25.74 mg/kg with a retention rate of 25.62% compared to RPO, and an overall acceptance score of 5.90 ± 0.61, classified as "slightly liked" closed to "liked". The MSM emulsion jelly product contained vitamin A at 86 RE per 100 g. A serving size of 75 g provide 64,5 RE of vitamin A, equivalent to 16,30 –17,20% of the recommended daily intake (RDI) for children, thus the MSM emulsion jelly to be claimed as a source of vitamin A.
