      Pengembangan Produk Permen Jeli Berbasis Emulsi Minyak Sawit Merah sebagai Sumber Provitamin A

      Abstract
      Kekurangan vitamin A (KVA) masih menjadi masalah serius yang mengancam risiko kematian pada anak di Indonesia. Minyak sawit merah (MSM) mengandung tinggi karotenoid sebagai sumber provitamin A. Pengembangan produk permen jeli berbasis MSM yang digemari anak penting dilakukan dalam upaya meningkatkan asupan vitamin A harian. Penelitian ini bertujuan mendapatkan formula permen jeli berbasis emulsi MSM sebagai sumber provitamin A yang memiliki sifat fisikokimia sesuai dengan produk komersial dan diterima secara sensori. Penelitian dilakukan dengan karakterisasi bahan baku dan emulsi MSM, serta merancang formulasi dan komposisi nutrisi produk permen jeli terbaik. Hasil penelitian menunjukkan bahwa bahan baku MSM memenuhi SNI 9098:2022 tentang Minyak Makan Merah. Emulsi MSM yang terbentuk memiliki nilai stabilitas sebesar 92,68%. Aplikasi emulsi MSM pada permen jeli memengaruhi karakteristik produk, seperti tekstur yang kurang kompak. Permen jeli (F3) dengan 17,36% emulsi MSM ditentukan sebagai produk terpilih dengan total karotenoid sebesar 23,14 ± 0,46 ppm yang dapat membantu memenuhi 20-26,7% AKG vitamin A harian anak 1-8 tahun. Hasil ini menunjukkan bahwa permen jeli F3 memenuhi klaim sumber provitamin A yang diharapkan dapat membantu penanggulangan KVA. Namun, hasil uji rating hedonik masih memiliki skor 4-5 (netral-agak suka), sehingga masih perlu perbaikan terutama pada atribut sensori tekstur.
       
      Vitamin A deficiency (VAD) is a serious issue that increase mortality risk among children in Indonesia. Red palm oil (RPO) contains high levels of carotenoids as a source of provitamin A. This study aimed to develop jelly candy based on RPO emulsions that popular among children to help increase daily vitamin A intake. This research included the characterization of raw materials and of RPO emulsion, as well as formulation and characterization of the selected jelly candy product. The RPO used met the quality standard SNI 9098:2022 for Red Cooking Oil. The RPO emulsions formed has a stability value of 92.68%. The application of RPO emulsions in jelly candies affects product characteristics, such as less compact texture. Jelly candy (F3) with 17.36% RPO emulsions was selected as the best product with a carotenoid content of 23.14 ± 0.46 ppm, which can help fulfill approximately 20-26.7 % of the daily vitamin A for children aged 1-8 years. These results indicate that jelly candy F3 meets the claim as a source of provitamin A, which is expected to help VAD. However, the hedonic rating test results scored 4-5 (neutral to slightly liked), so improvements are still needed, especially in terms of texture.
