      Abstract
      Buah sukun yang diperoleh dari pohon sukun (Artocarpus altilis) adalah jenis buah yang memiliki kandungan karbohidrat tingg dan dapat digunakan sebagai komoditi sumber bahan pangan potensial. Buah sukun temasuk jenis buah klimakterik yang memiliki kadar air tinggi, sehingga rentan terhadap kebusukan.
