      Abstract
      Kulit buah kopi yang dihasilkan oleh para petani di KTH Cibulao belum sepenuhnya terolah secara optimal oleh mereka. Para petani menginginkan adanya sebuah nilai tambah untuk kulit buah kopi sehingga memberikan penghasilan lain selain biji kopi. Konsumen potensial menyukai makanan dan minuman yang menyegarkan, seperti teh dan kopi dengan mobilitas mereka yang tinggi. Maka diperlukan produk olahan teh dan kopi yang dapat meningkatkan konsentrasi dan meningkatkan mood. Produk olahan kulit buah kopi belum banyak dikenal, sehingga potensi pasar mereka masih sangat kecil. Penelitian ini bertujuan untuk mengembangkan konsep produk dan model bisnis kolaboratif antara KTH Cibulao dan Departemen TIN dari kulit buah kopi yang dapat diterima dan diinginkan oleh target pasar. Penelitian terdiri dari tahap eksplorasi, ideasi dan verifikasi. Target segmen pasar adalah masyarakat Bogor dari kalangan menengah ke atas yang berusia produktif antara 15 dan 64 tahun. Solusi yang ditawarkan adalah produk olahan kulit buah kopi yang praktis, menyegarkan, menyehatkan, dan memiliki rasa yang enak.
       
      The cherry coffee peel-based produced by farmers in KTH Cibulao has not been fully optimally processed by them. The farmers want to create added value for cherry coffee peel-based to generate additional income apart from coffee beans. Potential consumers prefer refreshing food and beverages, such as tea and coffee, given their high mobility. Therefore, processed tea and coffee products are needed that can enhance concentration and improve mood. Cherry coffee peel-based products are not widely known, resulting in a very small market potential. This research aims to develop a product concept and collaborative business model between KTH Cibulao and the Department of TIN for cherry coffee peel-based that is acceptabel and desirable to the target market. The research consists of exploration, ideation, and verification stages. The target market segment is the productive population aged between 15 and 64 years from the middle to upper-class society in Bogor. The proposed solution is a practical, refreshing, and healthy processed cherry coffee peel-based product with a delicious taste.
