Analisis Atribut Mutu pada Produk Madu dalam Kemasan Menggunakan Klasifikasi Caswell
Abstract
Beragam variasi pada produk pangan mencerminkan mutu intrinsik dan
ekstrinsik produk tersebut. Salah satu karakteristik produk pangan dapat dilihat dari
kemasannya. Kemasan produk pangan memiliki fitur yang unik sehingga dapat
memberikan perbedaan terhadap produk sejenis. Madu dalam kemasan terdiri dari
empat jenis kemasan yang mungkin memiliki atribut mutu berbeda pada setiap tipe
kemasan. Atribut mutu yang penting pada madu dalam kemasan akan dinilai, lalu
atribut mutu yang dominan akan ditentukan. Tujuan dari penelitian ini adalah
menentukan atribut mutu intrinsik dan ekstrinsik yang dominan pada produk madu
dalam kemasan berdasarkan klasifikasi Caswell, dan faktor apa saja yang menjadi
preferensi konsumen dalam memilih produk madu dalam kemasan. Hasil survey
menunjukkan bahwa sertifikasi merupakan atribut mutu dominan pada produk madu
dalam kemasan. Sertifikasi BPOM dan Halal adalah sertifikasi yang paling
diperhatikan oleh responden. Pada atribut keamanan pangan, responden sangat
memperhatikan bahaya biologi. Atribut lain yang termasuk dalam klasifikasi
Caswell, khususnya atribut sensori, produsen, dan kandungan gizi juga
dipertimbangkan. Walaupun sertifikasi merupakan atribut yang dominan, kombinasi
atribut intrinsik dan ekstrinsik memberikan efek yang lebih baik dalam menentukan
preferensi konsumen. Dilihat dari jenis kemasannya, madu dengan kemasan botol
plastik memiliki atribut dominan nilai tambah, merek, dan iklan. Madu dengan
kemasan botol kaca memiliki atribut dominan gizi dan sensori. Madu dengan
kemasan jar kaca memiliki atribut dominan keamanan dan pengemasan. Madu
dengan kemasan sachet memiliki atribut dominan harga dan distribusi. Food products have several variations that reflect intrinsic and extrinsic quality.
One of the characteristics of a product can be seen from the packaging. Food
packaging may provide unique and distinct features that can distinguish it from
other similar products in terms of quality. Packaged honey consist of four types
which may have different quality attributes for each packaging types. The important
quality attributes in packaged honey product will be assessed, then the dominant
quality attributes will be determined. The objective of this study were to determine
the dominant intrinsic and extrinsic quality attributes in packaged honey products
based on Caswell classification, and determine what factors influence consumer
preferences in choosing packaged honey products. The study conducted by using
online survey. The results of responses indicated that certification was the dominant
quality attribute in packaged honey products. BPOM and Halal were the important
certifications desired by respondents. On the food safety attribute, respondents were
especially concerned about biological hazards. Other attributes included in the
Caswell classification, especially sensory, producer, and nutritional content are
also concidered. Although certification is the dominant attribute, the combination of
intrinsic and extrinsic attributes had great effect in determining consumer
preferences. Based on the type of packaging, honey with plastic bottles packaging
has the dominant attributes of added value, brand, and advertisement. Honey in
glass bottles packaging has the dominant attributes of nutritional content and
sensory. Honey in glass jar packaging has dominant security and packaging
attributes. Honey with sachet packaging has the dominat attribute of price and
distribution.
