Abstract: African catfish (Clarias gariepinus) has a high protein content, which is potential to be used as protein hydrolysate. This research aimed to determine the optimum condition for hydrolysis and to characterize african catfish protein hydrolysate. The optimum concentration of papain used for hydrolysis of African catfish protein was 5% (w/v) for 5 hours hydrolysis time and degree of hydrolysis was 47.238%. Protein hydrolysate from African catfish had a yield of 12.16% and water content of 3.45%; ash content of 2.47%; protein content of 69.26%; and fat content of 0.50%. African catfish protein hydrolyzate had a solubility value of 98.86%; the foam stability of 6.4%; capacity and stability emulsion of 65.90% and 43.18%; water holding capacity of 3.8 mL/g; fat absorption of 6.5 mL/g; and the color (brightness) with a value of L at 57.47.
