| dc.description.abstract | Antioksidan merupakan salah satu bahan aditif yang dapat melindungi bahan pangan dari kerusakan oksidasi penyebab ketengikan. Berdasarkan sumbernya, antioksidan terbagi atas antioksidan terbagi atas antioksidan alami dan antioksidan sintetik. Antioksidan alami dianggap lebih aman daripada antioksidan sintetik. Hasil penelitian Fujimoto et al (1985) dan Cahyana et al (1992) telah membuktikan adanya senyawa bioaktif pada alaga laut yang berfungsi sebagai antioksidan. | en |
