Abstract: Analysis of Mucor inaeauisoorw M05 I I / 4 oil stability that was kept at 60C, was done including the values of peroxide, thiobarbituric acid (TBA), total oxydation and the content of gamma linolenic acid. Determination of peroxyde value that was carried out using both the iodometric and ferrythiocyanic methods, resulted in apositive correlation with correlation factor of 0.9727. The linear quution of this correlation was y = 0.0361~+ 0.1246, where y was the absorbance value obtained by ferry thiocyanate method and x was the rnilliequivalent per kg. During storage from 0 to 9 days, oil kept without the addition of antioxidants showed accelerated peroxyde value that was not accompanied by high TBA value as well as by dramatic decrease ofgamma linolenic acid. After 9 days of storaee. peroxyde value in the oilappeared to reach the maximum value, which was accompanied by the increase in malonaldehide (MDA) and the decrease of gamma linolenic acid. Similar patterns were observed in oil added with antioxidants, but the increase of the peroxyde value wos lesr. Th result ofantioxidant addition in theoil, showed that the mirtureofa-tocopherol, ascorbicacid, citricacid and lecithin was more effective than a-tocopherol alone. The result of this research revealed that the higher the peroxyde and MDA value, the higher its total oxydation value.
