Abstract: This research was conducted to prove the ability of kusambi's bark (Schlelchera olsosa MERR.) to work as a persentative for nirs. In the preliminary study, the pH test of nira was required to know the optimum amounts of kusambi's bark for the nira preservation. As 100 g of kusambi's bark can preserve 4 liters nira for 23 hours from the time nira was tapping.
