Abstract: | Petani kopi di Indonesia umunya melakukan pengolahan kopi dengan cara kering. Kadar air awal biji kopi hasil pengolahan yang dilakukan mereka relatif masih tinggi (sekitar 15% hingga 20%) sehingga penyimpanan dalam jangka waktu lama sulit diharapkan. |
