Abstract: Rambutan, like most kinds of fruits deteriorate very quickly in days, therefore it needs packaging material with high permeability. Therefore air and gases can flow interchangeably and freely on the packaging film. Plastic film permeability can be improved by application of perforations or holes. The aim of this research is to study the influence of perforation (microperforation) in the LDPE antifog packaging material on preserving rambutan fruits freshness. The research used LDPE with 44 μm thickness with 100 μm perforation diameter. The treatment used in this research is packaging technology (utilizing LDPE antifog packaging with various number of perforation and stretch film) and two levels of storage temperatures (room temperature, and 10°C). The measured responses are the physical, chemical and physiological changes of rambutan fruits at 7th, 14th and 21st day. From this research, it is found that storing in modified atmosphere with a temperature of 10°C with LDPE antifog packaging material with perforation can keep rambutan fruit freshness significantly on the two varieties of rambutan observed. Best result is achieved on the use of LDPE antifog with 10 perforation and storage temperature of 10°C. In this storage condition, gases balance is reached on the 21st day with 0.001 % O2 concentration and 0.000798 % CO2 concentration.
