| Abstract: | PT Bukit Baros Cempaka merupakan produsen keju lokal yang menghadapi
tantangan rantai pasok kompleks dengan produk yang mudah rusak. Permasalahan utama mencakup ketidakpastian pasokan susu segar, kerusakan produk saat
distribusi, serta belum adanya sistem pengukuran kinerja yang sistematis. Penelitian
ini bertujuan mengidentifikasi situasi rantai pasok, mengukur kinerjanya, dan merancang model pengukuran berbasis Supply Chain Operations Reference (SCOR). 15 Key Performance Indicators (KPI) tervalidasi pada lima proses utama SCOR: plan, source, make, deliver, dan return. Hasil menunjukkan empat KPI
berkategori rata-rata, yaitu Forecast Accuracy, Yield, Delivery Item Accuracy, dan
Supplier Payment Cylce Time. Rekomendasi perbaikan mencakup peningkatan
akurasi peralaman, penguatan sistem cold chain distribusi, perbaikan perencanaan produksi, serta efisiensi logistik untuk menekan biaya. Penelitian ini menghasilkan prototipe dashboard berbasis Google Spreadsheet yang aplikatif untuk memantau, mengevaluasi, dan meningkatkan kinerja rantai pasok secara berkelanjutan. PT Bukit Baros Cempaka is a local cheese producer facing challenges in managing a complex supply chain with perishable products. The main problems include uncertainty in the supply of fresh milk, product damage during distribution, and the absence of a systematic performance measurement system. This study aims to identify the supply chain situation, measure its performance, and design a measurement model based on the Supply Chain Operations Reference (SCOR) framework. A total of 15 Key Performance Indicators (KPIs) were validated across the five main SCOR processes: plan, source, make, deliver, and return. The results indicate that four KPIs fall into the average category, namely Forecast Accuracy, Yield, Delivery Item Accuracy, and Supplier Payment Cycle Time. Recommended improvements include enhancing forecasting accuracy, strengthening cold chain distribution, improving production planning, and increasing logistics efficiency to reduce costs. This research produced a prototype performance measurement model using Google Spreadsheet, which can be used to monitor, evaluate, and improve supply chain performance on a continous basis. |
