dc.description.abstractTingkat kesegaran ikan laut menjadi indikator penting dalam menilai penurunan mutu sepanjang rantai pasok pascapanen, mulai dari proses penangkapan di laut hingga tahap distribusi akhir kepada konsumen. Penelitian ini bertujuan untuk mengevaluasi kualitas ikan dari lokasi pengepul di Tempat Pelelangan Ikan (TPI) dan pasar tradisional di Kalianda, Lampung Selatan. Metode yang digunakan meliputi analisis organoleptik, pH, total volatile base (TVB), trimetilamina (TMA), formaldehida aktif (FA), dan dimetilamin (DMA). Sampel ikan kakap, selar, sarden, dan semar dianalisis untuk membandingkan tingkat kualitasnya. Hasil penelitian menunjukkan bahwa sampel ikan dari pengepul dinyatakan lebih segar dibandingkan sampel ikan dari pasar tradisional. Hasil statistik menunjukkan perbedaan signifikan pada parameter kualitas fisik dan kimia antara ikan dari pengepul dan pasar, namun secara statistik tidak terdapat perbedaan signifikan dalam kandungan formaldehida alami. Implikasi hasil penelitian ini diharapkan dapat membantu meningkatkan pengelolaan mutu ikan, serta mendukung kebijakan pengawasan ketat dalam rantai pasok produk perikanan.
dc.description.abstractThe freshness level of saltwater fish is an important indicator in assessing quality degradation throughout the post-harvest supply chain, from the fishing process at sea to the final distribution stage to consumers. This study aimed to evaluate the quality of fish from collection sites at the fish auction place and traditional markets in Kalianda, South Lampung. The methods used included organoleptic analysis, pH, total volatile base (TVB), trimethylamine (TMA), active formaldehyde (AF), and dimethylamine (DMA). Samples of snapper, mackerel, sardine, and semar fish were analyzed to compare their quality levels. The results of the study indicate that fish samples from collectors are fresher than those from traditional markets. Statistical results show significant differences in physical and chemical quality parameters between fish from collectors and markets; however, there are no statistically significant differences in natural formaldehyde content. The implications of these findings are expected to assist in improving fish quality management and support strict oversight policies within the fisheries product supply chain.
