| dc.description.abstract | Ikan bawal tawar memiliki nilai gizi dan ekonomis yang tinggi serta memiliki sifat yang mudah rusak (perishable). Penelitian ini bertujuan untuk menentukan konsentrasi terbaik daun kelor yang dapat digunakan sebagai preservasi alami bawal tawar dan menganalisis perubahan kualitas kimia, mikrobiologi, dan histologi selama penyimpanan suhu chilling. Perlakuan terdiri atas perendaman bubuk daun kelor dengan konsentrasi 5%, 10%, dan 15% dan dengan akuades (kontrol). Parameter yang dianalisis meliputi nilai total volatile base (TVB), total plate count (TPC), pH, serta histologi ikan. Hasil penelitian menunjukkan bahwa perlakuan konsentrasi kelor 15% merupakan konsentrasi paling efektif dalam menekan kemunduran mutu, yakni TVB sebesar 9,18 mg N/100g, TPC sebesar 4,09 log CFU/g, dan pH 6,38 pada hari ke-6 penyimpanan. Uji histologi memperlihatkan struktur jaringan otot ikan pada perlakuan konsentrasi kelor 15% tetap terjaga dibandingkan kontrol. Dengan demikian, bubuk daun kelor berpotensi sebagai bahan pengawet alami untuk memperpanjang umur simpan ikan bawal tawar. | - |
| dc.description.abstract | Freshwater pomfret has high nutritional and economic value and is highly perishable. This study aimed to determine the best concentration of moringa leaves as a natural preservative for freshwater pomfret and to analyze changes in chemical, microbiological, and histological quality during cold storage. The treatments consisted of soaking moringa leaf powder at concentrations of 5%, 10%, and 15%, and then with distilled water (control). The parameters described included total volatile base (TVB), total plate count (TPC), pH, and fish histology. The results showed that the 15% moringa concentration treatment was the most effective concentration in suppressing quality compression, with TVB of 9.18 mg N/100g, TPC of 4.09 log CFU/g, and pH 6.38 on the 6th day of storage. Histological tests showed that the structure of fish muscle tissue in the 15% moringa concentration treatment remained intact compared to the control. Thus, moringa leaf powder has the potential to be used as a natural preservative to extend the shelf life of freshwater pomfret. | - |
