| dc.description.abstract | Microwave merupakan teknologi alternatif untuk inaktivasi mikroba menggunakan pemanasan volumetrik yang mampu meminimalisir kerusakan fisik, kimia, maupun sensori pada susu akibat pemanasan konvensional. Teknologi ini lebih efisiensi secara energi dan ramah lingkungan. Penelitian ini bertujuan menganalisis secara komprehensif efektivitas pemanasan microwave terhadap inaktivasi mikroba pada susu melalui kajian meta-analisis dan faktor yang mempengaruhinya. Sebanyak 9 artikel dengan total 90 studi yang memenuhi kriteria inklusi dianalisis menggunakan model random-effects dengan ukuran efek raw mean difference (RMD) dan interval kepercayaan 95%. Hasil meta-analisis menunjukkan bahwa pemanasan microwave berpengaruh signifikan (p < 0,05) dalam menginaktivasi mikroba dengan nilai efek keseluruhan 1.962. Analisis subgroup menunjukkan bahwa jenis mikroba, waktu, daya, dan suhu berpengaruh signifikan terhadap efektivitas inaktivasi, dengan bakteri Gram negatif memiliki resistensi paling rendah, diikuti Gram positif dan total plate count (TPC). Kondisi pemanasan dengan waktu = 120 detik, daya = 1200 W, dan suhu 60–85?°C memberikan efektivitas tertinggi. Analisis meta-regresi menunjukkan hanya variabel waktu yang berpengaruh signifikan, sedangkan daya dan suhu tidak signifikan secara statistik karena heterogenitas antar studi. Evaluasi bias publikasi menunjukkan bentuk funnel plot simetris dengan nilai fail-safe number jauh melebihi ambang batas 5(N)+10, yang menandakan hasil meta-analisis stabil dan minim bias publikasi. | - |
| dc.description.abstract | Microwave technology is an alternative method for microbial inactivation using volumetric heating that minimizes physical, chemical, and sensory damage to milk compared to conventional heating. This technology is more energy-efficient and environmentally friendly. This study aimed to comprehensively analyze the effectiveness of microwave heating in microbial inactivation of milk and the influencing factors through a meta-analysis. A total of nine articles comprising 90 studies that met the inclusion criteria were analyzed using a random-effects model with a raw mean difference (RMD) effect size and a 95% confidence interval. The meta-analysis results showed that microwave heating had a significant effect (p < 0.05) on microbial inactivation, with an overall effect size of 1.962. Subgroup analysis indicated that microbial type, heating time, power level, and temperature significantly influenced inactivation effectiveness, with Gram-negative bacteria showing the lowest resistance, followed by Gram-positive bacteria and total plate count (TPC). Heating conditions with a duration of =120 seconds, power =1200 W, and a temperature range of 60–85?°C demonstrated the highest effectiveness. Meta-regression analysis revealed that only heating time had a significant effect, while power and temperature were not statistically significant due to high heterogeneity among studies. Publication bias evaluation showed a symmetrical funnel plot and a fail-safe number far exceeding the 5(N)+10 threshold, indicating that the meta-analysis results are stable and minimally affected by publication bias. | - |
