| Abstract: | Anak-anak berusia 7–12 tahun dengan Attention Deficit Hyperactivity
Disorder (ADHD) membutuhkan asupan gizi yang mendukung perkembangan otak
dan perilaku hiperaktif, berasal dari sumber protein dan omega-3, serta bebas gluten
dan kasein. Penelitian ini bertujuan untuk mengembangkan produk snack bar
berbahan dasar kacang Sacha Inchi, kacang hijau, chia seed, kurma, dan madu
sebagai kudapan fungsional untuk anak ADHD. Metode yang digunakan adalah
eksperimen dengan tiga formulasi berbeda, yaitu kandungan Sacha Inchi dan kurma
(F1 35%:30%, F2 40%:25%, F3 45%:20%). Berdasarkan hasil uji organoleptik,
nilai tertinggi diperoleh pada formula 3 dengan rata-rata 3,71 dan kandungan gizi:
protein 26,77%, omega-3 15,80%, serta mampu memenuhi 100% kebutuhan
omega-3 anak per takaran saji 6 gram. Produk ini berpotensi menjadi alternatif
pangan sehat yang mendukung kebutuhan gizi anak dengan ADHD. Children aged 7-12 years with Attention Deficit Hyperactivity Disorder (ADHD) need nutritional intake that supports brain development and hyperactive behavior, from protein and omega-3 sources, as well as gluten and casein-free. This research aims to innovate snack bar products made from Sacha Inchi nuts, green beans, chia seeds, dates, and honey as functional snacks for ADHD children. The method used was an experiment with three different formulations, the content of Sacha Inchi and dates (F1 35%:30%, F2 40%:25%, F3 45%:20%). Based on the results of the organoleptic test, the highest value is formula 3 with an average of 3.71 and nutritional content of: protein 26.77%, omega-3 15.80%, and contributes to the child's nutritional adequacy rate to the need for omega-3 100% per serving dose of 6 g. This product has the potential to be a healthy food alternative that supports the nutritional needs of ADHD children. |
