| dc.description.abstract | Teh putih dibuat dari daun teh muda yang dikeringkan tanpa mengalami fermentasi enzimatik. Proses fermentasi, yang melibatkan oksidasi katekin, dapat mengurangi kandungan antioksidan dalam teh. Teh putih yang tidak mengalami fermentasi dinilai memiliki nilai antioksidan yang lebih tinggi dan memiliki profil sensorik yang unik. Aktivitas antioksidan teh putih dipengaruhi daerah tumbuh tanaman teh dan proses pengolahannya di pabrik. Umumnya pabrik pengolahan teh putih mengolah daun teh yang berasal dari perkebunan disekitar pabrik. Analisis profil sidik jari dapat dilakukan untuk mengamati perbedaan kandungan fitokimia dari sampel teh putih dari berbagai produsen. Sampel teh putih dari 5 produsen yang berbeda, yaitu sampel 775, 548, 449 dari Jawa Barat, sampel 307 dari Jawa Tengah, dan sampel 009 dari Jawa Timur. Sampel-sampel tersebut dianalisis profil warna infus menggunakan kromameter, profil sidik jari dengan FTIR, dan analisis aktivitas antioksidan masing-masing. Analisis warna menunjukkan bahwa sampel 775, 548, dan 009 memiliki warna yang relatif sama berdasarkan ?E yang dihitung < 3.3. Analisis antioksidan menunjukkan bahwa sampel 307 memiliki IC50 terbaik pada konsentrasi 25,29 mg/L diikuti oleh sampel 548, 009, 449, dan 775. Hasil analisis sidik jari menunjukkan bahwa semua sampel memiliki serapan pada bilangan gelombang 1242 (ester), 1600—1400 (ikatan rangkap cincin), dan fenol pada 3518 cm-1 yang mewakili turunan katekin dan 2360 (amina) serta 1400—1200 cm-1 (karbonil) yang mewakili asam amino. Data analisis sidik jari dianalisis menggunakan PCA multivariat untuk mengamati distribusi setiap sampel, yang kemudian dikelompokkan untuk analisis lebih lanjut dengan OPLS-DA. Berdasarkan hasil PCA, sampel dibagi menjadi 2 kelompok: sampel 548, 307, dan 009 dalam kelas 1, dan 449 serta 775 dalam kelas 2. Kelas 1 memiliki penciri bilangan gelombang yang mewakili kelompok amina dan ester aromatik. Kelas 2 memiliki penciri bilangan gelombang yang mewakili kelompok hidrogen dalam struktur aromatik dan kelompok fenol. Data analisis sidik jari kemudian dikorelasikan dengan data analisis antioksidan menggunakan teknik multivariat OPLS. Hasil menunjukkan bahwa bilangan gelombang 1666 dan 2360 cm-1 yang merujuk pada ester karbonil dan amina memiliki korelasi positif yang kuat dengan aktivitas antioksidan. Intensitas puncak gugus fungsional tersebut memiliki intensitas tertinggi ditemukan pada sampel 307 yang memiliki aktivitas antioksidan terbaik. | |
| dc.description.abstract | White tea is made from young tea leaves that are dried without undergoing enzymatic fermentation. The fermentation process, which involves the oxidation of catechins, reduces the antioxidant content in tea. White tea that does not undergo fermentation is thought to have better antioxidant activity and unique sensory profile. antioxidant activity of white tea can be varied depend on its growing region and processing method. White tea producers usually obtain raw tea leaves from the tea farm near their factory. Fingerprint profile analysis can be conducted to observe the differences in phytochemical content of white tea samples from various producers. White tea samples from 5 different producers, samples 775, 548, 449 from West Java, sample 307 from Central Java, and sample 009 from East Java. The samples were analysed for infused color using a chromameter, fingerprint analysis with FTIR, and antioxidant activity analysis respectively. Color analysis showed that samples 775, 548, and 009 had relatively the same color visually based on calculated ?E < 3.3. Antioxidant analysis showed that sample 307 had the best IC50 at a concentration of 25.29 mg/L followed by samples 548, 009, 449, and 775. Fingerprint analysis results showed that all samples had absorption at wave numbers 1242 (ester), 1600—1400 (ring double bond), and phenol at 3518 cm-1 representing catechin derivatives and 2360 (amine) and 1400—1200 cm-1 (carbonyl) representing amino acids. Fingerprint analysis data were analysed using multivariate PCA to observe the distribution of each sample, which was then grouped for further analysis with OPLS-DA. The samples were divided into 2 groups: samples 548, 307, and 009 in class 1, and 775 and 449 in class 2. Class 1 had wave number markers that represented amine and aromatic ester groups. Class 2 had wave number markers that represent hydrogen groups in aromatic structures and phenol groups. The FTIR fingerprint data were then correlated with antioxidant data using OPLS multivariate technique. The results showed that the following wave numbers, 1666 and 2360 cm-1 that refer to ester carbonyl and amine had a strong positive correlation with antioxidant activity. The highest intensity of the peak of these functional groups was found in sample 307, which was the sample with the highest antioxidant activity. | |
