| Abstract: | Ketertelusuran (traceability) adalah salah satu hal penting di sistem jaminan mutu pangan terutama dalam menghadapi kemungkinan penarikan produk (recall) akibat adanya penyimpangan dari regulasi. Mock Recall menjadi hal penting untuk mengevaluasi sistem ketertelusuran. Penelitian yang dilakukan di PT XYZ memiliki tujuan merancang prosedur mock recall dan mengevaluasi serta memberikan saran perbaikan pada sistem ketertelusuran dengan menganalisis secara observasi dan wawancara. Hasil dari identifikasi yang dilakukan berdasarkan analisis dari regulasi didapatkan bahwa PT XYZ belum mengimplementasi prosedur penilaian, indikator keberhasilan, dan monitoring dari sistem ketertelusuran, belum adanya standarisasi pemeliharan dokumentasi, belum adanya pelatihan ketertelusuran, dan tinjauan ulang. Terdapat empat hambatan yaitu terdapat hambatan teknis, hambatan operasional, hambatan manajerial, dan hambatan rantai pasok. Saran peningkatan yang dapat dilakukan adalah dengan menggunakan sistem integrasi ERP, MES, CRM untuk pencatatan digital, mengimplementasi SOP mock recall, membuat standarisasi pemeliharaan pencatatan, informasi sales, dan supplier, melakukan pelatihan internal dan membuat diagram alir untuk efektifitas komunikasi antar divisi. Traceability is one of the important things in the food quality assurance system, especially in dealing with the possibility of product recalls due to deviations from regulations. Mock Recall is important to evaluate the traceability system. The research conducted at PT XYZ aims to design a mock recall procedure and evaluate and provide suggestions for improvements to the traceability system by analyzing observations and interviews. The results of the identification carried out based on the analysis of regulations showed that PT XYZ had not implemented assessment procedures, success indicators, and monitoring of the traceability system, there was no standardization of documentation maintenance, no traceability training, and reviews. There were four obstacles, namely technical obstacles, operational obstacles, managerial obstacles, and supply chain obstacles. Suggestions for improvement that can be made are to use an ERP, MES, CRM integration system for digital recording, implementing mock recall SOP, creating standardization of record maintenance, sales information, and suppliers, conducting internal training and creating flow diagrams for effective communication between divisions. |
