Abstract: P4S Mubarok Farm bergerak di bidang eduwisata hidroponik yang melibatkan pengunjung dalam proses budidaya sayuran pakcoy. Namun terjadi ketidakseimbangan antara jumlah panen dan pemanfaatannya dalam kunjungan, sehingga menyebabkan overproduksi pakcoy. Kondisi ini mendorong inovasi produk olahan guna memanfaatkan hasil panen berlebih. Penelitian ini bertujuan menyusun rencana pengembangan produk, menganalisis kelayakan finansial, serta nilai tambah yang diperoleh. Metode yang digunakan mencakup pendekatan deskriptif untuk aspek pasar, produksi, pemasaran, dan BMC serta pendekatan kuantitatif untuk analisis biaya, kelayakan (R/C ratio, B/C ratio, HPP, BEP), dan nilai tambah menggunakan metode Hayami. Hasil penelitian menunjukkan bahwa target pemasaran mencakup pengunjung eduwisata dan konsumen lokal, dengan jadwal produksi terstruktur. Total biaya produksi sebesar Rp639.453 dengan nilai R/C ratio 2,07, B/C ratio 1,07, dan rasio nilai tambah mencapai 74%. Hasil ini menunjukkan bahwa produk layak dikembangkan sebagai solusi inovatif untuk overproduksi pakcoy, berkelanjutan secara finansial, serta memberikan nilai tambah tinggi.
P4S Mubarok Farm engages in hydroponic edutourism, involving visitors in pakcoy cultivation. However, an imbalance between harvest volume and its use during visits leads to pakcoy overproduction. This condition prompted innovation in processed products to utilize the surplus. This study aims to develop a product plan, analyze financial feasibility, and assess added value. Methods include a descriptive approach for market, production, marketing, and BMC aspects, and a quantitative approach for cost analysis, feasibility (R/C ratio, B/C ratio, HPP, BEP), and added value using the Hayami method. Results show that the target market consists of edutourism visitors and local consumers, with a structured production schedule. The total production cost is Rp639,453, with an R/C ratio of 2.07, B/C ratio of 1.07, and a value-added ratio of 74%. These findings indicate the product is feasible to develop as an innovative solution to pakcoy overproduction, financially sustainable, and offers high added value.
