1000 Hari Pertama Kehidupan (HPK) merupakan periode krusial bagi pertumbuhan
anak, di mana pemberian Makanan Pendamping ASI (MP-ASI) yang berkualitas
menjadi faktor penting dalam mencegah stunting. Berdasarkan Survei Kesehatan
Indonesia (SKI) tahun 2023, prevalensi stunting di Indonesia masih tinggi, yaitu
sebesar 21,5%, dengan penyebab utama kurangnya asupan protein dan kalsium.
Ikan kembung sebagai sumber protein hewani lokal memiliki potensi tinggi, namun
konsumsi oleh anak sering terkendala duri dan aroma amis. Penelitian ini bertujuan
mengembangkan produk abon ikan kembung sebagai alternatif MP-ASI yang kaya
protein dan kalsium. Penelitian menggunakan desain eksperimental kuantitatif
dengan 30 panelis untuk uji hedonik dan uji laboratorium. Hasil menunjukkan
bahwa formula abon dengan tulang lebih disukai (skor 3,78), serta memiliki
kandungan 49,29 g protein dan 1350,45 mg kalsium per 100 g. Takaran saji 10 g
dapat memenuhi ±41% kebutuhan protein dan ±54% kebutuhan kalsium anak usia
1–2 tahun. Produk ini berpotensi menjadi solusi praktis peningkat asupan gizi anak.

Supervised by FIRMAN MUHAMMAD BASAR The First 1000 Days of Life is a critical period for child growth, during which the provision of high-quality complementary feeding (MP-ASI) plays an essential role in preventing stunting. According to the 2023 Indonesian Health Survey (SKI), the national stunting prevalence remains high at 21.5%, mainly due to insufficient protein and calcium intake. Indian mackerel (Rastrelliger sp.), as a local source of high-quality animal protein, has great potential, yet its consumption among children is often limited due to fish bones and a fishy odor. This study aims to develop shredded mackerel (abon) as an MP-ASI alternative rich in protein and calcium. A quantitative experimental design was used with 30 panelists for hedonic testing and laboratory nutrient analysis. Results showed that the bone-in formula was more preferred (score: 3.78), containing 49.29 g of protein and 1350.45 mg of calcium per 100 g. A 10 g serving can meet approximately 41% of protein and 54% of calcium needs for children aged 1–2 years. This product has strong potential as a practical solution to improve child nutrition.
