dc.description.abstractAnak-anak yang mengalami kekurangan gizi dapat menghadapi tantangan yang signifikan dalam kemampuan perkembangan dan pertumbuhan otak anak. Produk ready-to-use fish food berbasis tepung ikan tenggiri yang tinggi omega-3, dengan penggunaan minyak ikan (omega-3), minyak kedelai (omega-6), atau minyak sawit merah (omega-9) dapat mendukung pertumbuhan dan perkembangan kognitif pada balita. Penelitian ini bertujuan untuk mengeskplorasi pengembangan ready-to-use-fish food (RUFF) berbasis protein dari ikan dan penggunaan minyak ikan sarden (MS), minyak kedelai (MK), dan minyak sawit merah (MM) untuk meningkatkan pertumbuhan dan perkembangan kognitif pada model tikus yang mengalami kurang protein. Penelitian ini dimulai dengan pembuatan tepung ikan tenggiri, dilanjutkan dengan pembuatan produk RUFF yang ditambahkan MS, MK, atau MM dan intervensi produk RUFF pada model tikus jantan lepas sapih. Pada pengujian in vivo, terdapat lima kelompok yaitu: kontrol (10% protein), kurang protein (5% protein), RUFF MS, RUFF MK, dan RUFF MM. Keempat kelompok terakhir dibuat kondisi kurang gizi dengan cara pemberian pakan kurang protein (5% protein) selama 2 minggu. Setelah 2 minggu 3 kelompok RUFF diintervensi dengan produk RUFF MS, RUFF MK, RUFF MM selama 14 hari. Tikus yang diintervensi dengan ke-3 produk RUFF menunjukan kenaikan berat badan yang signifikan yaitu sebesar 45,00, 52,80, dan 40,80 g masing-masing untuk kelompok RUFF MS, RUFF MK, RUFF MM. Kelompok intervensi RUFF memiliki peningkatan berat badan yang lebih baik dibandingkan dengan kelompok kontrol yaitu sebesar 2,60 g dan kelompok kurang protein mengalami penurunan berat badan sebesar 4,60 g. Pada masa intervensi dilakukan pengujian classic labyrinth test sebanyak 3 kali. Kelompok RUFF MS, MK, dan MM dapat menyelesaikan classic labyrinth test berturut-turut selama 47,16, 48,98, dan 31,56 detik, lebih cepat dibandingkan dengan kelompok kontrol (75,36 detik) dan kurang protein (246,60 detik). Kelompok tikus RUFF MS, RUFF MK, dan RUFF MM memiliki berat otak akhir berturut-turut sebesar 1,56, 1,65, 1,60 g dan volume otak sebesar 1,72, 1,68, 1,72 cm3. Hasil pengujian menunjukan bahwa berat dan volume otak pada kelompok tikus yang diberikan produk RUFF lebih besar dibandingkan dengan kelompok tikus kurang protein dan kelompok tikus kontrol yang memiliki berat otak berturut-turut sebesar 1,38 dan 1,47 g, serta volume otak 1,44 dan 1,52 cm3. Disimpulkan bahwa intervensi RUFF MS, RUFF MK, dan RUFF MM pada tikus yang mengalami kekurangan protein dapat mengalami recovery yang dilihat dari peningkatan berat badan dan perkembangan kognitif tikus kondisi kurang protein.
dc.description.abstractChildren who are malnourished may encounter significant challenges in their developmental abilities and brain growth. Ready-to-use-fish food products based on mackerel flour, which is rich in omega-3 fatty acids, along with the addition of fish oil (omega-3), soybean oil (omega-6), or red palm oil (omega-9), can support growth and cognitive development in toddlers. This study aims to investigate the development of ready-to-use-fish food (RUFF) based on protein from fish and incorporating sardine oil (MS), soya oil (MK), and red palm oil (MM) to enhance cognitive growth and development in malnourished rats models. This study began with the manufacture of mackerel flour, followed by the manufacture of RUFF products added with MS, MK, or MM and the intervention of RUFF products in weanling male rats. In the in vivo test, there were five groups: control (10% proteins), protein deficiency (5% proteins), RUFF MS, RUFF MK, and RUFF MM. the last four groups were made malnourished by feeding less protein (5% protein) for 2 weeks. After 2 weeks, the 3 RUFF groups were intervened with RUFF MS, RUFF MK, and RUFF MM products for 14 days. Rats intervened with all three RUFF products showed significant weight gains of 45.00, 52.80, and 40.80 g for the RUFF MS, RUFF MK, and RUFF MM groups, respectively. The RUFF intervention group exhibited a weight gain advantage of 2.60 g compared to the control group, while the protein deficiency group experienced a weight loss of 4.60 g. Furthermore, the RUFF MSS, RUFF MK, and RUFF MM groups outperformed the control group in terms of weight gain. Throughout the intervention period, the classic labyrinth test was conducted three times. The RUFF MS, MK, and MM groups completed the classic labyrinth test in 47.16, 48.98, and 31.56 seconds, respectively, all of which were significantly faster than the control group (75.36 seconds) and the protein deficiency group (246.60 seconds). The RUFF MS, RUFF MK, and RUFF MM rat groups had final brain weights of 1.56, 1.65, and 1.60 g, and brain volumes of 1.72, 1.68, and 1.72 cm3, respectively. The results showed that the brain weight and volume in the group of rats given the RUFF product were greater than those in the protein deficiency group and the control group of rats, which had brain weights of 1.38 and 1.47 g, respectively, and brain volumes of 1.44 and 1.52 cm3. It is concluded that the intervention of RUFF MS, RUFF MK, and RUFF MM in protein deficiency rats can lead to recovery, as seen from the increase in body weight and cognitive development rats.
