Abstract: Kopi merupakan salah satu komoditas hasil perkebunan yang mempunyai peran penting dalam kegiatan perekonomian di Indonesia. Indonesia merupakan negara penghasil kopi terbesar ke-3 dunia setelah Brazil, dan Vietnam. Pemanenan merupakan tahap penting yang memengaruhi produksi kopi dan memiliki dampak signifikan terhadap kualitas dan kuantitas hasil akhir. Uji petik berguna untuk memetakan kualitas hasil panen pada hari itu dan sebagai bahan evaluasi untuk peningkatan kualitas di masa mendatang. Penelitian ini bertujuan untuk menganalisis efektivitas pelaksanaan uji petik terhadap produksi kopi, mengukur tingkat kematangan optimal buah kopi, serta mengukur mutu kopi yang dihasilkan. Penelitian dilakukan di Kebun Kayumas PT Perkebunan Nusantara XII di Situbondo, Jawa Timur, selama 16 minggu. Metode yang digunakan termasuk pengamatan langsung, wawancara, dan analisis data primer dan sekunder. Data menunjukkan bahwa pemetikan buah kopi secara selektif dan manual dapat mempengaruhi kualitas biji kopi. Hasil uji petik menunjukkan bahwa persentase buah merah memenuhi standar perusahaan, namun persentase buah hitam yang lebih tinggi dari standar mengindikasikan adanya masalah pada panen awal.
Coffee is one of the plantation commodities which has an important role in economic activities in Indonesia. Indonesia is the 3rd largest coffee producing country in the world after Brazil and Vietnam. Harvesting is an important stage that influences coffee production and has a significant impact on the quality and quantity of the final product. The picking test is useful for mapping the quality of the harvest on that day and as evaluation material for improving quality in the future. This research aims to analyze the effectiveness of carrying out the picking test on coffee production, measure the optimal level of maturity of the coffee fruit, and measure the quality of the coffee produced. The research was conducted at the Kayumas Plantation of PT Perkebunan Nusantara XII in Situbondo, East Java, for 16 weeks. The methods used include direct observation, interviews, and analysis of primary and secondary data. Data shows that selective and manual picking of coffee cherries can affect the quality of coffee beans. The results of the picking test showed that the percentage of red fruit met the company's standards, but the percentage of black fruit which was higher than the standard indicated a problem in the initial harvest.
