Coffee is one of the plantation commodities which has an important role in economic activities in Indonesia. Indonesia is the 3rd largest coffee producing country in the world after Brazil and Vietnam. Harvesting is an important stage that influences coffee production and has a significant impact on the quality and quantity of the final product. The picking test is useful for mapping the quality of the harvest on that day and as evaluation material for improving quality in the future. This research aims to analyze the effectiveness of carrying out the picking test on coffee production, measure the optimal level of maturity of the coffee fruit, and measure the quality of the coffee produced. The research was conducted at the Kayumas Plantation of PT Perkebunan Nusantara XII in Situbondo, East Java, for 16 weeks. The methods used include direct observation, interviews, and analysis of primary and secondary data. Data shows that selective and manual picking of coffee cherries can affect the quality of coffee beans. The results of the picking test showed that the percentage of red fruit met the company's standards, but the percentage of black fruit which was higher than the standard indicated a problem in the initial harvest.-
