Abstract: Fillet ikan nila adalah produk yang mudah busuk dan rusak. Sifat biopreservatif diperoleh dari ekstraseluler Pediococcus pentosaceus BP(20). Penelitian ini bertujuan untuk menentukan pengaruh penggunaan supernatan bebas sel (SBS) dan supernatan bebas sel netral (SBSN) P. pentosaceus BP(20) sebagai biopreservatif terhadap karakteristik mikrobiologis dan kimiawi fillet ikan nila pada penyimpanan suhu chilling. Perlakuan yang diberikan pada fillet yaitu SBS, SBSN, formalin 4% (kontrol +), dan distilled water (kontrol -) yang dilakukan dengan pembaluran pada fillet sebanyak 9 mL/30 g. Fillet disimpan pada suhu chilling dan dianalisis total volatile base (TVB), pH, dan total plate count (TPC) pada hari ke-0, 3, 6, 9, dan 12. Aplikasi supernatan bebas sel netral (SBSN), supernatan bebas sel (SBS) dari P. pentosaceus BP(20) mampu menghambat proses kemunduran mutu fillet ikan nila. Fillet ikan nila perlakuan SBS dan SBSN pada H12 memiliki nilai pH 5,40 dan 6,40, nilai TVB 15,87 dan 15,29 mg N/100 g, dan nilai TPC 6,05 dan 5,72 log CFU/g
Nile tilapia fillets are highly perishable and prone to spoilage. This study aims to determine the effect of using cell-free supernatant (CFS) and neutral cell-free supernatant (CFS-N) of Pediococcus pentosaceus BP(20) as biopreservatives on the microbiological and chemical characteristics of Nile tilapia fillets during chilled storage. The treatments applied to the fillets were cell-free supernatant, neutral cell-free supernatant, 4% formalin (control +), and distilled water (control -), with 9 mL/30 g of each treatment applied to the fillets. The fillets were stored at chilling temperature and analyzed for total volatile base (TVB), pH, and total plate count (TPC) on days 0, 3, 6, 9, and 12. The application of CFS and CFS-N from P. pentosaceus BP(20) isolates effectively inhibited the quality deterioration of Nile tilapia fillets. Nila fish fillets treated with CFS and CFS-N at H12 had pH values of 5.40 and 6.40, TVB values of 15.87 and 15.29 mg N/100 g, and TPC values of 6.05 and 5.72 log CFU/g
