Abstract: Gelatin merupakan protein hasil hidrolisis parsial kolagen yang terdapat pada kulit, jaringan ikat putih dan tulang hewan. Kebutuhan gelatin di Indonesia masih dipenuhi melalui impor dari beberapa negara. Sebagian besar gelatin yang diimpor terbuat dari kulit dan tulang babi atau sapi sehingga menimbulkan kekhawatiran dari aspek kehalalan dan keamanannya. Oleh karena itu, kulit ikan cucut dapat menjadi alternatif sumber bahan baku pembuatan gelatin. Tujuan penelitian ini adalah untuk menentukan lama waktu perendaman NaOH dan konsentrasi CH3COOH terbaik, serta menentukan karakteristik gelatin dari kulit ikan cucut yang dihasilkan. Produk gelatin terbaik diperoleh dari kulit ikan cucut yang direndam dalam NaOH 0,1 M selama 12 jam dan CH3COOH 0,1 M. Analisis fisika dan kimia terhadap gelatin menghasilkan rendemen 8,50%; kadar air 7,87%; abu 3,34%; pH 6,82; kekuatan gel 155,25 Bloom; viskositas 2,27 mPas; dan titik gel 13,7°C serta menghasilkan gugus fungsi khas gelatin amida A, I, II dan III.
Gelatin is a protein produced by partial hydrolysis of collagen from the skin, white connective tissue and bones of animals. The need for gelatin in Indonesia still depends on its imports from several countries. Most imported gelatin is made from skin and bones of pig or cow, which is a concern for some religions regarding its halal and safety aspects. Therefore, shark skin as a raw material source for gelatin can be an alternative. This research aims to determine the best NaOH soaking time and CH3COOH concentration and to characterize shark skin gelatin produced from the best treatments. The best gelatin product was obtained from shark skin soaked in 0.1 M NaOH for 12 hours and 0.1 M CH3COOH. Physical and chemical analysis was conducted in order to characterize gelatin which revealed that yield was 8.50%; moisture 7.87%; ash 3.34%; pH 6.82; gel strength 155.25 Bloom; viscosity 2.27 mPas; setting point 13.7°C; and shows identical functional groups, namely amide A, I, II, and III.
