dc.description.abstractAnak usia sekolah adalah kelompok usia yang rentan terhadap kekurangan zat gizi. Asupan gizi yang tepat dalam jumlah dan kualitas harus memenuhi kebutuhan pertumbuhan dan perkembangan anak untuk mencapai tumbuh kembang optimal. Makanan selingan merupakan makanan tambahan untuk memenuhi kebutuhan harian anak. Modifikasi makanan selingan tinggi energi dan protein dengan penambahan zat gizi lain untuk penunjang tumbuh kembang anak. Bomboloni merupakan kudapan seperti donat yang berbahan dasar tepung terigu dengan isian krim yang cukup digemari masyarakat khususnya anak sekolah. “Bombube” merupakan bomboloni dengan substitusi ubi ungu. Penelitian ini untuk mengetahui tingkat penerimaan bomboloni ubi jalar ungu kepada anak usia sekolah. Penelitian ini menggunakan 3 formula dengan perbandingan tepung terigu : ubi jalar ungu yaitu 80 : 20, 70 : 30, dan 60 : 40. Penelitian ini dilakukan melalui 2 tahap yaitu penelitian pendahuluan dan penelitian lanjutan. Hasil penelitian pendahuluan yakni formula terpilih yaitu formula 3. Penelitian dilanjutkan dengan penelitian lanjutan yaitu uji hedonik kepada panelis anak dengan hasil penilaian aspek penampilan 80%, rasa 90%, tekstur 88,75%, aroma 82,5%, dan penampilan 77,5%-
dc.description.abstractSchool-aged children are an age group that is vulnerable to nutritional deficiencies. Appropriate nutritional intake in quantity and quality must meet the needs of children's growth and development to achieve optimal growth and development. Snacks are additional food to meet children's daily needs. Modification of snacks high in energi and protein with the addition of other nutrients to support children's growth and development. Bomboloni is a donut-like snack made from wheat flour with cream filling which is quite popular with the public, especially school children. “Bombube” is Bomboloni with purple sweet potato substitution. This study aims to determine the level of acceptance of purple sweet potato Bomboloni among school-aged children. This research used 3 formulas with a ratio of wheat flour: purple sweet potato, namely 80: 20, 70: 30, and 60: 40. This research was carried out in 2 stages, namely preliminary research and further research. The results of preliminary research are the selected formula, namely formula 3. The research is continued with further research, namely hedonik tests on child panelists with the results of assessing color aspects 80%, taste 90%, texture 88.75%, aroma 82.5%, and appearance 77.5%-
