| dc.description.abstract | Rambut jagung merupakan limbah tanaman jagung yang memiliki kandungan flavonoid dan dapat dimanfaatkan sebagai pangan fungsional bagi penderita diabetes. Flavonoid berguna untuk menurunkan kadar gula darah. Penelitian ini dilakukan untuk memanfaatkan limbah rambut jagung yang dapat diperoleh pada pedagang jagung untuk diproses menjadi produk pangan fungsional bagi penderita diabetes. Desain penelitian yang digunakan adalah desain eksperimental dengan random sampling yang melibatkan sebanyak 30 panelis. Penelitian dilakukan dengan 3 perlakuan untuk mendapatkan rata-rata kesukaan panelis terhadap puding abon rambut jagung di uji menggunakan uji organoleptik. Hasil penelitian ini didapatkan bahwa abon dengan penggunaan rambut jagung paling banyak lebih disukai pada segi rasa, tekstur, dan warna. | - |
| dc.description.abstract | Corn silk is corn waste which has flavonoid content and utilizable functional food for diabetic. Flavonoid ia useful for lowering blood sugar level. This research done for utilize corn silk waste which obtainable from corn seller for processed to food functional product for diabetics. The research design used an experimental design with random sampling that involved 30 panelist. The research done with 3 treatments to obtain the average of panelist’s preference about corn silk floss tested using organoleptic test. The results of this research showed that the floss with the most usage of corn silk got the most like in terms of the taste, texture, and color. | - |
