Abstract: Pesantren Modern At-Taqwa Gunung Putri merupakan lembaga pendidikan islam swasta di Kabupaten Bogor. Kegiatan di pesantren menimbulkan banyak limbah, terutama limbah makanan. Penelitian ini memiliki tujuan yaitu untuk mengidentifikasi, menganalisis, dan melakukan pemanfaatan terhadap food loss dan food waste yang dihasilkan. Metode penelitian ini adalah eksperimen dengan tahap observasi awal yang mengacu pada SNI 19-3964-1994, kemudian melakukan pengolahan limbah makanan. Pesentase hasil pengukuran rata-rata berat dan volume sampah terpilah selama delapan hari untuk kategori sampah bahan pangan mentah sebesar 10,69% dan 6,75% sedangkan sampah bahan pangan matang sebesar 2,82% dan 0,56%. Hasil pemanfaatan didapatkan sebanyak 3,3 kg pupuk organik padat, 500 ml pupuk cair, dan 7 liter eco-enzyme. Aplikasi produk eco-enzyme menjadi sabun pencuci piring dan hand sanitizer. Analisis biaya produk diperoleh harga jual sebesar Rp18.085 untuk 500 ml sabun pencuci piring , Rp6.220 untuk 60 ml hand sanitizer, pupuk padat 1 kg sebesar Rp13.377, dan Rp8.687 untuk 500 ml pupuk cair.
Modern Pesantren At-Taqwa Gunung Putri is a private Islamic educational institution in Bogor Regency. Activities at the pesantren generate a lot of waste, especially food waste. This study aims to identify, analyze, and utilize the food loss and food waste generated. This research method is an experiment with an initial observation stage that refers to SNI 19-3964-1994, then processing food waste. The percentage of measurement results of the average weight and volume of segregated waste for eight days for the raw food waste category was 10.69% and 6.75% while the cooked food waste was 2.82% and 0.56%. The utilization results obtained were 3.3 kg of solid organic fertilizer, 500 ml of liquid fertilizer, and 7 liters of ecoenzyme. Application of eco-enzyme products into dishwashing soap and hand sanitizer. Product cost analysis obtained a selling price of Rp18,085 for 500 ml of dishwashing soap, Rp6,220 for 60 ml of hand sanitizer, 1 kg of solid fertilizer at Rp13,377, and Rp8,687 for 500 ml of liquid fertilizer.
