Abstract: Daging sapi lokal merupakan salah satu sumber protein hewani yang digemari oleh masyarakat Indonesia. Pada umumnya, daging sapi lokal didapatkan dari pemotongan sapi di rumah pemotongan hewan (RPH). RPH Ciawitali merupakan salah satu RPH milik pemerintah Kabupaten Garut yang paling produktif. Tujuan dari penelitian ini untuk mengevaluasi produktivitas ternak dan karkas sapi lokal berdasarkan karakteristik produksi rumpun, jenis kelamin, umur, body condition score (BCS), bobot potong, bobot karkas dan persentase karkas yang diamati selama tiga minggu pemotongan. Penelitian ini menggunakan analisis deskriptif dan analisis one way ANOVA dengan uji lanjutan Duncan. Hasil penelitian menunjukkan sapi yang paling banyak dipotong adalah sapi Peranakan Limousin (42%), berjenis kelamin betina (74%), umur I2 (34%) dan memiliki skor BCS 3 (41%). Sapi lokal yang dipotong memiliki rataan bobot potong 371,438±93,54 kg, bobot karkas 162,693±50,40 kg serta persentase karkas 43,42±0,43%. Hasil menunjukkan produktivitas ternak dan karkas sapi yang dipotong masih rendah dan dibawah rataan produktivitas sapi nasional.
Local beef is one of the most popular animal protein sources in Indonesia. Generally, local beef is obtained from slaughtering local cattle in abbatoirs. Ciawitali abbatoir is one of the most productive abbatoirs owned by the Garut Regency government. The objective of this study was to evaluate the productivity of cattle and carcasses of local cattle based on the production characteristics, which is the cattle’s breed, sex, age, body condition score (BCS), slaughter weight, carcass weight and beef yield observed during three weeks of slaughter. This study used decriptive analysis and one way ANOVA analysis with Duncan’s further test. The result showed that the most slaughteres cattle were Peranakan Limousin cattle (42%), female cattle (74%), age I2 (34%) and had BCS score 3 (41%). Local cattle slaughteres had an average slaughter weight of 371,438±93,54 kg, carcass weight of 162,693±50,40 kg and beef yield 43,42±0,43%. The results show that the productivity of local cattle slaughtered is still low and below the average national cattle productivity.
